For multiplication I would have them choose 2 numbers to multiply. You could use 1-digit for beginners, 2-digit numbers or higher depending on the level of your students.

I have my students choose any 2 numbers and add them together. I have them continue to add throughout the week, and on Fridays I give PBIS tickets for the amount of problems they work. This week, I changed all the numbers to 3-digit numbers.
