My district adopted the Alphafriends curriculum a few years ago. One of the units in Alphafriends is Animals. The unit is towards the end of the year when my students are able to identify letters and beginning sounds much better than they were at the beginning of the year. I developed this Animal Counting Book to go along with my unit, and the students really enjoyed it.
Print the book, staple together along the left side to create a book, and have the students color only the object that is asked for in the text. For example, the first page says, "I see 1 farmer." I had my students "read" the text, find the farmer, and color only him on the page. Even though I teach preschool, most of my students were able to "read" the text and discern which objects to color on the page based on beginning sounds.
