I make graphs on a regular basis with my classroom of 2.5-year-olds (using their pictures) and besides being a fun math activity, it often stimulates conversations when I display the finished graph in the classroom. They like to talk about the different choices and who chose what and they continue to talk about "more" and "less" often without additional prompting from me!
