As a culminating activity for our states of matter unit, in small groups, students will complete this activity and make ice cream from half and half, sugar, vanilla extract and other various materials. Students should be familiar with the changes between states and how changes in temperature and energy affect the particles (atoms & molecules) inside the ingredients. (An advanced version is also included which will require students to graph the changes in the temperature of the ice used to freeze it). In this experiment, students will explore how heat moves between objects to change the milk from a liquid to a solid state, the ice to melt and condensation to be created on the outside of the bag. Students are asked to explain the changes to the properties of matter (and its atoms) as a result in changes in energy and make these connections to the changes between states.
