This is an easy way to teach students about how vascular tissue and xylem allow water to travel up through a stalk of celery. I love doing this lab as it is simple but it allows my students to dissect celery stalks to see how vascular tissue sends water to all parts of vascular plants. Also, the materials are incredibly easy to find!
Materials needed: fresh celery, celery that has been soaking in dyed water (soak the bottom half of the celery for several hours - overnight is best, magnifying lens, plastic knife, metric ruler
