I like to mix things up. Begin class some days with journal writing, and other days bring in a minilesson that focuses on one key aspect of one text. Each of these minilessons is taught via a half-page sheet with guided questions, followed by a brief writing prompt. This easy, quick lesson reinforces what we are already doing in class, but in a relaxed and engaging way. Students can learn to do these as part of a center activity or with a partner. Having two of these per page makes copying easier for you, as well.
