Cooking Lab Rubric

Description

Do you need an easy-to-grade cooking lab rubric for a residential style kitchen? Well, here it is. After years of trying out rubric after rubric, I finally created one that was simple, easy to grade, and student-friendly. I have used this rubrics for over 100 labs and it has worked wonderfully for all recipes and cooking challenges. It is even substitute friendly. My long-term substitute during my maternity leave was able to follow this rubric as well as another trusted substitute when my daughter was sick.

This rubric grades on the following:

Cleaning (30 pts) graded as a group

  • Dishes clean and put away and a clean sink (double basin sink at each individual kitchen) 6 pts
  • Sweeping 6 pts
  • Wipe counters and stove 6 pts
  • Aprons hung up after use 6 pts
  • Towels in the hamper and oven mitts put up 6 pts

Culinary Skills (40 points) graded as a group

  • Mise en place (teacher checks this before students can move on) 10 pts
  • Followed recipe 20 pts
  • Final Product 10pts

Professional Standards (30 points) graded individually

  • Closed toe shoes 2 pts
  • Long pants, no holes 2 pts
  • No jewelry 2 pts
  • Hair: up and off the shoulders 2 pts
  • Apron on correctly2 pts
  • Teamwork/Cooperation 10 pts
  • Behavior/Attitude 10 pts

**The professional attire is lower on the point scale, not because it is unimportant, but because I have found after 8 years of teaching that it does not matter if I take off ten points or 50, the same students that refuse to dress appropriately do not care about the number of points. They will dress how they want to dress and, unless you have full support from administration, there isn't much you can do to change their minds. If it will be a huge safety issue, such as bare legs around a deep fryer, then the student will get an alternate assignment. Did a student wear flip flops for the knife skills lab, alternate assignment. Simple as that, they knew they had a lab. The student's choice does not trump your responsibility to keep them safe.

I loved this rubric for the kichen lab. The concepts were great and my students really benefited from it. It made organizing the kitchen cleanup much easier for everyone. I highly recommend this resource for other teachers.

I like most of this form but did end up changing it to suit my purposes better. I did not agree with some of the points specified. I also do not feel that everyone should be penalized if someone does not complete their job. However, I did like the categories.
