Create a Colony allows your students to do just that...design their own colony using included guidelines and grid. I've made an activity that will get your students to consider all of the components of both a New England village and a southern plantation while they create one from scratch. This download is comprised of a two sided handout (one side for the village and one for the plantation) that lists all of the various places that your students need to include, a grid on which they can draw their village/plantation, and a page explaining what you need to do When they are done, your students will have demonstrated that they understand the layout of both the village and the plantation while producing finished copies of both. If you like, you can add a writing component after they have completed their colonies.
