When I give my students a final essay, we work on it i class for a minimum of 5 class periods. The steps that we take to reach the final product are as important as the final product itself. In order to reinforce this to my students, I give them two grades. One on the final product and one on the process. The steps in the process include the outline (thesis/assertion/evidence sheets), the first draft, peer review sheets which the fill out after reviewing one another's papers, editing checklist, and the final draft. I also give them a grade for their daily classwork.
