This lab is designed to meet the Carbon-based Molecules NGSS HS-LS1-6 standard. In the lab, students will investigate enzyme specificity, reusability, and denaturation. Students will utilize gelatin, fresh and canned pineapple juice, liver, potato, soil, NaOH, and HCl to examine the properties of enzymes. Students will investigate two questions: (1) How does pineapple juice affect gelatin ability to "set up" and (2) What can be used to slow down, or halt an enzyme's ability to function. Lab includes a lab introduction and lab analysis rubric, data rubric, and conclusion rubric.
