A great collection of resources for growing plants in the classroom.
Simple directions for growing seeds*, a time-lapse video, booklets in both English and Spanish, 4 suggestions for assessing student understanding. I included a PowerPoint™ presentation with images of plants that can grow without water. All the images are copyright free so use them any way you like!
Extend learning by growing a seed in a bag or a cup. Tie science into math by graphing growth, reading Jack and the Beanstalk and estimating beans (jelly beans!) in a container. Create an alphabet book using my list of plants to get you started. Read a book about growing plants - there's a list of those, too!

* I use a greenhouse and peat pellets - less messy, more success for my classroom because I don't worry so much about the humidity and watering the seeds. Consider Jiffy Model # 5049 - A greenhouse with 36 pellets. You can buy additional refill pellets.
