This lesson will discuss the concept of nutritional status. There will be a discussions on the DRIs (EAR, AI, UL, RDA), caloric requirements and methods for determining them, macronutrient composition, BMI and body composition. Case studies are included to determine the needs of the Canadian population, and to assess individual needs.
Be able to analyze individual nutrient intake and compare it with recommended intakes
Understand the Dietary Reference Intakes
Identify positive and negative trends in nutritional status in different age groups in Canada, and determine what changes need to be made to improve them
Prepare food items that meet the nutritional recommendations
