Welcome to my favorite resource for teaching healthy baking substitutions. This has been presented over and over to students and adults with great success: Neither group ever able to guess the original recipe. Paula Deen is known for high-fat indulgent recipes, so it is the perfect recipe for experimenting with different substitutions.
This resource includes five different recipes: The original, three demonstrating added fiber, low fat, and low sugar, and one that includes all of the healthy substitutions. The recipes are prepared and then taste-tested. Testers are asked which is the healthy one, which is the original, and which is their favorite. The healthiest is often picked for the favorite and the original is sometimes guessed as the most healthy!
