This lab's strong point is the fact that students understand that there are physical processes that go into the manufacture of ice cream.
Other good points are the reinforcement of heat flow principles. The ice cream mixture hardens because it is losing heat to the ice outside the container.
You will need lots of coffee cans, Ziploc bags, milk, cream, vanilla, and sugar for this lab... but every single year (surprise, surprise) the students love this lab more than any other.
My labs are straightforward. Some of them are paper labs, but the ones that involve significant laboratory setup or calculations to be made on the part of the teacher are written about in a Teacher Notes section at the end of those particular labs. I use relatively safe and inexpensive chemicals. Of course, safety precautions are always noted at the beginning of the lab.
