This game describes the French (Escoffier) Brigade and a more Modern Kitchen Brigade.
It explains the stations people work at, the the job tiles/roles they hold while they work in those stations. It contrasts a Modern Kitchen Brigade with the older French Brigade.
It is set up to be used in a Jeopardy style game.
The categories can be either French Brigade Stations, French Brigade Roles, Modern Brigade Stations and Modern Brigade Roles. OR The game can be played for students to learn about Kitchen Stations and Kitchen Roles/Job Titles.
I have included the game tiles for you to cut along the divided line. On the back of your game tile you will have to write a point amount.
I have also included answer sheets in a chart format for you to mimic using the game tiles (face down). You just have to write in your points value on the back of your sheets.
This power point will take you through a Kitchen Brigade. Only in large kitchens like in banquet facilities or convention centres will you find stations broken down so specifically as in the classic french system. Most kitchens these days don't have these stations because of labour costs, but these jobs still exist. They are often just combined. The Saucier may also work the grill and make sauces al la minute. The Legumier may also work the oven as the Rotisseur and Poisneire.
It all depends on the size of the kitchen and type of food served.
