I always try to incorporate at least one sculpture based project in my Introduction to Art class. I want to give my students a taste of what a 3D or ceramics class would be like to help them decide what art course to take next. 

This lesson introduces students two three construction methods in clay. They have to make a coil bowl, a slab bowl, and a bowl on the pottery wheel (an optional part of the lesson if you don't have access to pottery wheels). This lesson gives students a chance to try out hand building and throwing on the wheel.
