A Thinkboard is a great way to assess student understanding. This thinkboard has a section for students to make their number, draw their number, name the hundreds/tens/ones and work out 1more/1 less/10 more/10 less.
IN MY CLASSROOM I give each student a number appropriate to their level. For some students it may be a two digit number. I provide materials such as bundling sticks and unifix. If this is used as an assessment I will not provide any help. Once students have finished their thinkboard I will take a photo to ensure I can review later. This allows me to look at how they have made their number with materials.
