As a middle school teacher I TOTALLY understand that middle schoolers need reminders about their volume from time to time. If you have clear expectations your stress level will go down drastically (as long as you follow through on those expectations). This Classroom Noise Meter poster is something I use in my own classroom. I have mine laminated as well as the arrow (you have four colors to choose from: red, blue, yellow, or green). I'll let them class know that we're about to enter work time for the activity I've just explained and I'll place the arrow at what an appropriate noise level should be. Sometimes I'll ask them what they think it should be, and they're usually spot on. If not, we'll take a minute to discuss reasons why, but that's all part of what I'm comfortable with as a teacher, and how I'm trying to help them be good members of the community they're in.
