This packet was inspired after hearing Kathie Nunley talk about Layered Curriculum (help4teachers.org). I am in no way connected to her website or cause but thought that bringing choice into assignments in the Spanish classroom was a brilliant idea. This packet offers many different activities for students to complete to demonstrate knowledge of the Spanish-speaking countries. They show their abilities in many ways, from the most basic to more complex. For many of these activities, there are rubrics also included; while some require students to orally explain their process and were graded based on their ability to do just that. This is not meant to be a packet you can take and use directly, it will require some changing and tweaking to fit your classroom but it presents a way to start to give students some freedom in their work.
