Instead of writing to tell the reader what they did over Summer Vacation, have your students tell what they did not do.
I like using this twist to the traditional idea as it inspires the students to think. It is a bit more challenging to tell what you would like to do and why as opposed to sharing that which you have already experienced.

This activity was created for students who write five paragraph pieces, however, it is adaptable to meet the needs of your students.
