This is a newer version of the symbol/theme poster project that is in my unit pack (check my store!). I created this as a differentiated option for shorter class periods, and/or to simplify for some groups of kids.
Students will need to understand the function of a literary symbol and theme in order to complete this. I usually reserve this project for after the mid-way or the end of the novella.

Obviously, you are not locked in on the themes/symbols, so of course encourage your students to add their own theme (especially if you want to challenge them a little!)
I like to put kids in groups of 2-3, and let them choose one symbol, draw it on the left side, write about what it represents on the right, and then decide which theme they can tie in, writing that on the bottom.
Put them up in the classroom for display! Easy!
