The Restaurateurs is a restaurant design project that I did with my middle school students last year. It is an immensely detailed project that includes all of the following aspects of business/restaurant design:
1. Restaurant proposal, logo, and motto
2. Business plan
3. Floorplan and blueprints
4. Menu writing
5. Marketing and advertising campaign
6. Budgeting and accounting
7. Placement in real-life restaurant scenarios
8. Taste testing activity
Though materials are not included for it, I introduced this project alongside a reading of Yes, Chef by Marcus Samuelsson (Chapter 1 only). The reading is brilliant as Samuelsson uses his personal life to highlight how important food is to families and cultures around the world.

TEACHERS NOTE 1: This project vastly benefits from having regular access computers and the Internet, but I designed it so that it is not necessary.
TEACHERS NOTE 2: The final activity included is a taste testing activity. In my case, I brought in various types of food that has the qualities of those listed in the activity. It's a great one that gets students thinking about more than just the taste of food, but also about the importance of it and personal memories.
