Twelve years ago, my intention in creating Colors of Food Culinary Arts was to develop a well-rounded program to educate people in getting back to the basics of cooking and eating. With the prevalence of obesity and other health issues related to our busy modern lifestyles and industrialized food system, it was important to me to create something that could benefit everyone. My goal was to educate people in the simple art of cooking. After years of teaching the pilot program to teens, I found that I had made a difference in their lives. Students learned about nutrition, cooking, culinary skills and how to use several types of equipment. The best part was after preparing the recipes, they had discussions around the table, sharing foods they prepared and talking about what they liked or what changes they would m Through this process students realized that they didn’t have to eat foods that were packaged, out of a can, or microwaveable. They were capable of cooking for themselves using real ingredients. They were fully engaged. They were empowered! With over 30 years experience working with people of all ages, I witnessed the impact the art of cooking brought to each individual and the joy of discovering that they are capable of making decisions for their own health. I hope those who teach this program will enjoy it as much as I have. Bon appetite! The program is designed for teachers, counselors, educators, enrichment programs, summer camps, group homes, home schools, online courses, or other areas where there is a need for this type of education.
