I designed this scientific investigation for my third graders this year. In groups of 3 or 4, students will make a hypothesis about the number of seeds in their pumpkin, measure the circumference, weight, height, and whether it sinks or floats (data section), record the properties of their pumpkin (color, texture, shape), and then finally cut open the pumpkin and count the number of seeds.
