An assignment where high school students visit a store, church, or restaurant with many native Spanish speakers, experience what it's like to be in the language minority (if they are a native English speaker), and then write a reflection paper about it in English. The students dreaded doing this beforehand, but afterwards, they loved it. This is one of the assignments I am most proud of because I think it's at the core of what learning another language is about-- connecting to people and the world.
