You can even ask them to read them out loud at the end and it will not be boring at all! They will be proud to share their work. I have even done a "brag and boast contest" in which students entered theirs into a contest, and then I read those who submitted them aloud (anonymously), and then students voted on the biggest bragger. It was fun.
