This includes complete guides to easily organize and effectually produce Culinary or Nutrition Kitchen Labs!

What is inside?

  • Foods Lab Guide: Includes sections for students to fill out ingredients, equipment needed, unit, and skill practicing.

  • Foods Lab Evaluation: Includes a grading rubric for each lab out of 50 points. Graded in the categories of planning, pre-prep, cleanup, management, and teamwork/participation.

  • Mise en Place Guide: Includes a guideline for students to prepare to get "everything in its place." Filling out steps to take to prepare the dish, person assigned to step, and time to complete each step.

  • Kitchen Job Rotation Chart: Includes a job rotation and job duties for the year between four different jobs: Manager, Head Chef, Sous Chef, and Dishwasher. Keep this single paper all year for the kitchen group to keep track of jobs as so students are rotating duties in the lab!
