This is a wonderful multi-day project I have used for the past two years with my 8th grade math and honors Algebra 1 students! It is low-prep, takes around four 60-minute class periods, and is perfect for the end of the year after testing. Students select an image to trace in the free, online Desmos graphing calculator.
