This is a great system for keeping your kitchen running smoothly and all students performing their assigned duties. In my kitchen lab, I have assigned the following duties to 5 workstations: dish machine, dining room/laundry, food storage, chemical shelf & floors, 3 compartment sink/floaters. Student teams (I divide my students into 5 teams) will be assigned a duty for 1 week and will rotate the next week. Use these I can statements to deisgn the first 3 units of your foods course. The units I used are safety and sanitation, kitchen readiness, and introduction to nutrition.
