I'm a doc-cam loving teacher! I tend to have a flow in instruction of: demonstration, direct instruction, guided practice,, and spend the most time on independent practice with one-on-one check ins. I love getting to check in with each student and watch them work a problem. Once I've seen a student has a skill down with automaticity, they're on to skill-builders (largely number-sense activities) - even if they didn't do very many problems. If they've got it down, it's time to move forward!
I like to be structured, but that often looks like students all over the room, sitting in weird ways, laying on the floor, practicing and learning in their preferred posture.
