Have your students look at the cartoons that are written in Spanish and explain the joke as their response (I always collect responses using a Google Form). For lower level Spanish, have them explain the joke in English. For higher-level students, have them explain the joke in Spanish. Picking up on humor is one of the biggest tells in mastering a new language.

Begin exposing your students to facts about Spanish speaking countries with this set of slides loaded with all Spanish speaking countries. Take the time to edit the example slide for the city you teach in so students begin understanding.
