Madhubani Art, from India, is an accessible form of folk art that lends itself to all ability levels. The simple colors and shapes result in vivid pieces students love. The lessons go well with learning Elements of Art, particularly Lines. It can also engage students in understanding a monochromatic or limited color palette. I have used these lessons for several years and students always are excited and engaged, even students who don't think of themselves as "good artists"!
